One Dish Pasta Bake | Chicken & Mushroom

This quick-to-throw-together one dish pasta recipe, takes just minutes to prepare.

Made in one dish, no pre-cooking or boiling is required.

I used convenient ingredients straight from the freezer to make it, but you can of course use fresh veggies if you have them!

Getting straight to the point (that’s why you’re here, right?)…

 

To make this meal, you will need…

(SERVES 3-4)

400g of diced chicken breast

1 tin of chopped tomatoes

1 cup of frozen peas

1 cup of frozen mushrooms

1 cup of frozen diced onion

2 teaspoons of garlic granules/powder

2 cups of wholemeal pasta

2 chicken oxo cubes, crumbled

250ml of boiling water

120g of grated cheddar

 

You need to…

Put all the ingredients (in order), apart from the cheese in to an appropriately sized casserole dish, mix together well, and press it down gently

Place into an oven, preheated to 180 degrees (celcius, fan assisted), for 25 minutes

Remove from the oven carefully, and sprinkle the cheese on top

Cook for a further 25 minutes, checking that the cheese is going nicely golden

Remove and serve

Potato & Leek Soup | 12p Per Portion | #SKINTSOUP

Today I had to do what I do best and raid the cupboards to find something that I could whip into a hearty, healthy meal for my family’s lunch. I came up with this simple potato and leek soup.

Following on with my #skintsoup series, I wanted to add another REALLY cheap, easy and healthy soup recipe that works out at approximately 12p per portion.

This recipe makes around 10 portions, so it’s perfect to make a huge batch of to dish up at your convenience. It is a firm favourite with both of my kids and is a great way to get them eating vegetables plus keep them full up, warm and away from the snacks!

The recipe is so simple, with just 4 ingredients you can feed your family for a couple of days (depending on how hungry they are)!

I got the frozen leeks from Tesco for just £1. I find that frozen bags of ingredients are seriously handy to have in the freezer because when I stock up on fresh food I ALWAYS end up wasting it.

I use Tesco’s own stock pots, simply because I prefer them over stock cubes, they are cheaper than name brand ones and just as good. I got a pack of 4 for 90p.

I always have tins of new potatoes in my cupboards. They are awesome for throwing in to soups and salads, or even for a quick dinner with some chicken. I always buy the value version, they usually cost around 15p per tin.

I always leave adding any salt or pepper until the end, and until it’s in my own bowl. I don’t like adding unnecessary salt to the kids’ meals, so it is much better to add it individually to suit your own taste.

Thick and Creamy Breakfast Milkshake | Skint Momma

After a weekend (more like month) of over indulgence, take-aways, rich food, and generally lots of naughty things that have made me feel like a human balloon, I needed something fresh, filling and healthy for my breakfast this morning.

One of the best purchases that I made this year was my Breville Blend Active, its nothing short of awesome. I use it not just for smoothies and shakes, but pasta sauces and soups too!

I am no nutritionist, but I know what makes my body feel good and what makes it feel sluggish, and a dairy-free milkshake made with all natural ingredients certainly makes for a good start in the morning.

This shake is very thick and creamy like a proper naughty milkshake, without all the nasties. I find it also makes a great treat for the kids, my daughter thinks it’s ‘ice cream’, and thats OK with me!

To make this breakfast milkshake

You will need

1 avocado

1/2 a banana, frozen (read on below to find out how to correctly freeze your bananas)

4 strawberries, frozen

1 small handful of blueberries, frozen

200ml of almond milk (& a splash of water if you need extra liquid if its not blending)

Put it all into your blender and enjoy! It’s as simple as that.

 

How to Freeze Bananas

As crazy as it sounds, this part is very important!

To stop yourself ending up with a large banana brick that is impossible to separate, follow these steps.

  1. Take a few bananas
  2. Chop them in half
  3. Clear a space in your freezer
  4. Lay the halved bananas on some grease-proof paper and set onto a plate
  5. Take care that the bananas don’t touch each other
  6. Set in to the freezer  for up to 2 hours until they are frozen, but don’t leave them in too long or you won’t be able to get them off the plate
  7. Take your frozen banana halves and fill a ziplock freezer bag with them
  8. Pop them back in the freezer for a handy smoothie/milkshake filler whenever you need it

Halloween On a Budget | Skint Momma

Skint Momma’s simple Halloween on a budget…

With all of the party-going children being between the ages of 1 and 5, I wanted to throw them a fun little party this Halloween with out all of the expenses. By shopping around, I was able to find lots of little gems for the children to enjoy!

Starting with Asda we got some awesome decorations, paper dishes, plastic cutlery and some yummy chocolates and buns. Of course, I could have been one of those mums who make everything themselves, bake from scratch and be an all round domestic goddess…but I have 2 kids under 3 and I just didn’t have the time!

We also got all of our food from Asda. The frozen bags of party food are fantastic and always a treat for the little ones!

With everything being so affordable, it is fabulous for mums-on-the-go like me who just want it done…like yesterday.

Next we went to Home Bargains, where we found our costumes, even MORE sweets, our pumpkin buckets….and my broomstick!

Lastly, we popped quickly into Tesco and grabbed a GIANT PUMPKIN for just £3…my daughter insisted on carrying it, until she realised that it weighed almost the same as she did.

One Pan Breakfast Hash

I made this healthy, wholesome breakfast dish using some of my favourite frozen scratch cook ingredients from Asda.

If you would like to try this out too…

This serves 1 hungry person, or 2 if you like to share, adjust your quantities to suit the amount of people.

You will need…

  • 2 eggs
  • A large handful of sweet potato chunks
  • 1 chunk of frozen spinach (I microwave it for 1 minute before adding it to the pan)
  • A handful of fresh, halved baby tomatoes
  • 40g of grated mature cheddar
  • Olive oil spray (or whatever cooking oil spray you prefer)

You will need too…

  • In a hot pan with a little oil, fry the sweet potato chunks, spinach (after microwaving) and tomatoes until they are all softened
  • Add the eggs and fry until almost cooked
  • Sprinkle the grated cheddar on top
  • Place under a hot grill to melt the cheese and finish cooking the eggs
